Characteristics of the Castillo variety
Known for its smoothness, aroma and citric acidity. In blind tests and other sensory evaluations, Café de Colombia found that it may have similar qualities to Typica, Caturra, and Bourbon.
It presents soft body and bitterness, and pronounced aroma and acidity for medium degrees of roasting.
Bitter notes of dark chocolate are manifested
